VEGETABLE BIRYANI
Vegetable Biryani, is one of the most tasty and yummy dish. Biryani is always a dish which will taste great , but at the same time, great care as to be taken while cooking the rice. When it comes to vegetable briyani, the colourful carrot, beans, potatoes and peas gives a great look for the biryani.
Ingredients
Basmati rice
: 1 cup
Oil
: 1 tbsp
Roasted cummin seeds
: 1/2 tsp
Onion
: 1
: Red dry goan or Kashmiri chillies
: 6
Roasted coriander seeds
: 1 tsp
Cloves
: 4
Shelled cardamoms
: 4
Cinnamon
: 1
Peppercorns
: 6
Garlic
: 8 Cloves
Ginger
: 1 piece
Roasted khuskhus(poppy seeds)
: 1 tsp
Turmeric powder
: 1 tsp
Vegetables
(potatoes, carrots, turnips and frenchbeans)

: 1 cup
Shelled greenpeas
: 1/2 cup
Salt
: 1 tsp
Hot water
: 2 1/2 cups
Almonds or cashewnuts
: 1 tbsp
Lightly fried kismis(Sultanas)
: 1 tbsp
Sliced fried onions
: 1 tbsp
Method
- Mix oil, cummin seeds and onion in a bowl and microwave covered for 2 minutes.
- Mix in the ground ingredients cover the bowl and microwave further for 2 minutes.
- Mix in the rice, cubed vegetables, greenpeas and salt.
- Then pour in the hot water and microwave for 20 minutes.
- Let it stand for 5 minutes, then fork to loosen up the grains of rice.
- Spread out in a serving dish and garnish with almonds or cashewnuts, kismis and fried onions.
