MICROWAVE POTATO SALAD
This salad is great with any meal, and you can adjust the vegetables and dressing to suit your own taste.
Ingredients
Potato sliced 1/4" thick
: 2 pounds
Cold water
: 1/3 cup
Mayonnaise
: 1 cup
Onion; chopped
: 1/2 cup
Celery; chopped
: 1/2 cup
Dill pickles; chopped
: 1/2 cup
Prepared mustard
: 1 tbsp
Celery seed
: 1/2 tsp
Salt
: 1/2 tsp
Pickle juice
: to taste
Method
- Potatoes and water in a 2 quart glass casserole; cover.
- Microwave on high 10 to 12 minutes or until tender, stirring after 6 minutes. Drain.
- In a large bowl,stir together the remaining ingredients. Add potatoes; mi lightly. Chill.
