FOR THE KOFTAS
Water
1 cup
Washed and chopped palak
: 50 gms
Powdered nutmeg
: a pinch
Chilli sauce
: a pinch
Boiled, peeled and mashed arbi
: 100 gms
Chopped kismis
: 1/2 tsp
Shredded paneer
: 200 gms
Roasted and pounded cummin seeds
: a pinch
Minced onion
: 1 tsp
Finely chopped chilli
: 1
Minced cloves of garlic
: 2
Sliced pieces of bread
: 2
Juice of lime
: 1/2 tbsp
Flour
: 1 tbsp
Oil
: 1 tbsp
TO GARNISH
Finely chopped spring onion
: 1
Finely chopped coriander leaves
: 1 tbsp
Green chillies
: 4
FOR TOMATO GRAVY
Chopped tomatoes
: 4
Lightly browned onions
: 2 tbsp
Vinegar
: 1 tbsp
Sugar
: 1 tsp
Finely chopped ginger
: 1/2
Pounded cloves of garlic
: 6
Finely chopped mint leaves
: a few
Garam masala powder
: 1/2 tsp
Finely chopped green chilli
: 1
Tomato ketchup
: 1 tbsp
Water
: 1/2 cup
Salt
: To taste
Method
- Microwave water for 2 minutes and drop the spinach in it.Let it stand for 3 minutes.
- Plunge spinach into cold water, soueeze water out of the spinach and mash.Mix in nutmeg, chilli sauce, salt and pepper and keep aside.
- Mix all the rest of the koftas ingredients together with salt except flour and oil and make koftas (balls) the size of a walnut, stuffing them with the spinach mixture.Roll them in flour.
- Put oil in a shallow dish and microwave covered for 5 minutes, turning over the koftas in between during cooking.Mix the ingredients for tomato gravy and microwave for 5 minutes. Stir.
- Add the curds, milk and cornflour mixture and the mushrooms and microwave on HIGH for 2 minutes. Serve hot garnished with cream.
