MIXED VEGETABLE PICKLE Vegetarian-Dish

Mixed Vegetable Pickle goes well with rice recipes and parathas.



Ingredients

MIX TOGETHER AND KEEP FOR 1 HOUR
Jaggery
: 1/4 kg
Malt vinegar
: 2 cups
Mustard oil
: 1 kg
Thickly sliced shalgam (turnips)
: 1/2 kg
Cauliflower florets
: 1/2 kg
Thick carrots julienne
: 1/2 kg 1/8"
Turmeric powder
: 1 tsp
Chilli powder
: 1 tsp
Salt
: To taste
Roasted and pounded rye
: 1 1/2 tsp
Garam masala powder
: 1 tsp

Mixed Vegetable Pickle

Method

  • Wash and keep the vegetables in the sun for I hour to dry out the water, turning them over once.
  • Microwave covered in a deep bowl oil and vegetables for 3 minutes.
  • Stir in turmeric, chilli powder, rye and salt and microwave further for another 5 minutes, stirring in between.
  • Strain jaggery and vinegar and mix in with the vegetables.
  • Microwave for 10 minutes.
  • Let it stand for 5 minutes.
  • Mix in the garam masala powder.
  • Cool.
  • Pour into an air tight sterilized jar taking care that the ingredients are immersed in the mustard oil.
  • The pickle is ready for consumption.
