MINTED FRESH PEAS 
Garden peas with fresh mint is one of many healthy recipes. Fresh spring peas cooked with a bit of onion and seasoned with mint makes a refreshing, surprisingly hearty recipe.
Ingredients
Green peas, shelled
: 3 lb
Finely chopped fresh mint or
: 1 1/2 tsp
Dried mint leaves
: 1/4 tsp
Lettuce leaves
: 8 lg
Salt
: 3/4 tsp
Pepper
: 1/8 tsp
Sugar
: 3/4 tsp
Butter or margarine
: 3 tbsp

Method
- Wash lettuce leaves and line a deep, 1 1/2-quart, heat- resistant, non-metallic casserole with half of the moist lettuce leaves. Top with peas.
- Sprinkle peas with sugar, salt, pepper, and mint and dot with butter.
- Cover peas with remaining lettuce leaves.
- Heat, covered tightly,in Microwave Oven 9 minutes or until peas are tender.
- Carefully tilt cover to allow steam to escape. Then remove cover.
- Remove lettuce leaves and toss peas well before serving.
