MASALA BHAAT - MAHARASHTRA Vegetarian-Dish

Masale Bhaat is inextricably linked with Maharashtrian weddings. It is a spicy, Marathi version of the vegetable pulao and is usually served after the first course of varan-bhaat.



Ingredients

Uncooked Basmati rice
: 1/2 teacup
Green peas
: 50 grams
Potatoes
: 50 grams
Brinjals
: 50 grams
Onion, chopped
: 1
Chopped coriander
: 2 tbsp
Turmeric powder
: 1/4 tsp
Coriander-cumin seed (dhania-jeera) powder
: 2 tsp
Chilli powder
: 2 tsp
Garam masala
: 3/4 tsp
Ghee
: 1 1/2 tsp
Salt
: To taste
Chopped coriander for decoration
: 1 tbsp
To be ground into a paste
Grated fresh coconut
: 2 tbsp
Green chillies
: 2
Ginger
: 12 mm. piece
Garlic
: 5 to 6 cloves

 Masala Bhaat

Method

  • Cut the potatoes and brinjals into big pieces.
  • Mix the rice, vegetables, onion, coriander, turmeric powder, coriander-cumin seed powder, chilli powder, garam masala, paste, salt and ghee and add 1 1/2 teacups of water.
  • Cover and microwave on HIGH for 17 to 18 minutes, stirring in-between after every 5 to 6 minutes.
  • Decorate with chopped coriander.
