MICROWAVE FRIED CHICKEN
Although many of the older generation Southern cooks wouldn't consider compromising the family fried chicken recipe, the general availability of boneless, skinless chicken breasts has revolutionized the preparation of fried chicken.
Ingredients
Buttermilk baking mix
: 2/3 cups
Paprika
: 1-1/2 tsp
Salt
: 1-1/4 tsp
Pepper
: 1/4 tsp
Broiler-fryer
: 2-1/2 to 3-1/2 lb
Chicken
Method
- Mix baking mix, paprika, salt and pepper; coat chicken.
- Arrange chicken pieces, skin sides up, in rectangular microwavable dish, 12 x 7 1/2 x 2 inches, with thickest parts toward edges.
- Cover with waxed paper and microwave on high (100%) 10 minutes; rotate dish 1/2 turn.
- Microwave until done 8 to 12 minutes.
