CORN VERMICELLI
This is a very tasty and healthy dish especially for children done with corn and vermicilli.
Ingredients
Olive oil
: 3 tbsp
Broken vermicelli, boiled
: 500 gm
Onions, chopped
: 100 gm
Minced garlic
: 1 tbsp
Tomatoes, peeled and chopped
: 200 gm
Minced red chilies
: 1 tbsp
Boiled corn
: 1 cup
Dried oregano
: 1/2 tsp
Black pepper powder
: 1/4 tsp
Grated cheese
: 1/4 cup
A few sprigs parsley
: for garnishing
Method
- Heat oil in a casserole for a minute. add onions, garlic and mix.
- Cover and microwave high for three minutes until onion becomes soft.
- Add tomatoes and minced red chilies. microwave high for three minutes more.
- Add corn, oregano, salt and black pepper. mix and microwave high for one minute.
- Add vermicelli and mix well.
- Just before serving, sprinkle cheese over the vermicelli, cover and microwave
- High for three minutes so that the cheese will melt.
- Garnish with parsley and serve hot.
