MICROWAVE COCONUT TAPIOCA PUDDING

Ingredients
Coconut milk, 14 ounces
: 1 can
Milk
: 1 cup
Sugar
: 1/2 cup
Quick cooking tapioca
: 3 tbsp
Egg, beaten
: 1
Vanilla
: 1 tsp
Coconut, toasted
: 1/3 cup
Method
- Combine all ingredients (except the toasted coconut) in a large microwave safe bowl and let set for 5 minutes.
- Microwave on high for 10 to 12 minutes until mixture comes to a full boil, stirring every 10 minutes.
- Eat warm, or cover the top of the pudding with plastic wrap and store in the refrigerator.
- Top with the toasted coconut before eating.
