CARROT,WALNUT'N PEACH NUTRI CAKE
It certainly is a dessert of choice for ceremonial occasions, particularly Christmas.This cake can be made with fresh ripe peaches and walnut.
Ingredients
Maida
: 1 1/2 cup
Sugar
: 1 cup
Baking Powder
: 2 tsp
Carrot grated
: 1/2 cup
Orange juice
: 1/2 cup
Peach
: 1
Cinnamon powder
: 1/2 tsp
Vanilla essence
: 1/2 tsp
Salt
: 1/4 tsp
Instant Coffee powder
: 1/2 tsp
Finely chopped walnuts
: 1/3 cup
Oil
: 3 tbsp
Method
- Sieve the maida and baking powder together three times.
- Powder ½ cup of sugar and add to the maida.
- Puree the peach in the mixer and add to the above, also add the grated carrot and orange juice.
- Add the cinnamon powder, vanilla essence, salt, coffee powder and oil.
- Mix all the ingredients well.
- Pre-heat the oven to 1800C.
- Pour the cake mixture on a greased tray, sprinkle the chopped walnuts and ½ cup sugar on top of the cake mixture and bake for 30 mins.
- Cool well and serve.
