MICROWAVE CARROT PUDDING CAKE
This delicious, rich pudding is well-known all over the world. It is definitely not a diet food! Normally eaten warm, tastes really good combined with custard.
Ingredients
Carrots, grated
: 1 1/2 cups
Flour
: 3/4 cup
Baking powder
: 1 1/4 tsps
Baking soda
: 1/4 tsps
Salt
: 1/8 tsp
Egg
: 1
Low fat butter
: 5 tbsp
Skimmed milk yoghurt
: 3/4 cup
Custard or low at cream
Sugar
: 20 measures
Method
- Sift together the flour, baking powder, baking soda, cinnamon powder and salt.
- In another bowl mix together the beaten egg, oil and yoghurt till well blended.Stir in the grated carrots, the Sugar and the flour mixture and beat well. The mixture should be of a moist dropping consistency. If necessary add a little more yoghurt.
- Pour the batter into a lightly greased, 20 cm (8 inch) round, deep microwave proof dish
- Microwave on High for 4 minutes. Let stand in the oven for another 2 minutes to set
- Serve immediately with custard or low fat cream.
