MICROWAVE CARROT BREAD
Carrot Bread does not get the same publicity as Carrot Cake, but it's sure good. Carrot Bread is a lighter treat and good to pack to take to work or school for lunch.
Ingredients
Whole wheat flour
: 1/2 cup
All-purpose flour
: 1/2 cup
Granulated sugar
: 1/2 cup
Brown sugar
: 1/4 cup
Baking powder
: 1 tsp
Baking soda
: 1 tsp
Ground cinnamon
: 1 tsp
Salt
: 3/4 tsp
Vanilla
: 1 tsp
Vegetable oil
: 1/2 cup
Eggs
: 2
Raisins
: 1/3 cup
Method
- Grease bottom of a 9 x 5 inch glass loaf pan. Mix dry ingredients; add remaining.
- Add grated carrots last. Beat at low speed until blended.
- Pour the batter into a lightly greased, 20 cm (8 inch) round, deep microwave proof dish
- Microwave at medium high (70%) 6 minutes. Take out and cover ends with 2 inch wide aluminum foil.
- Then microwave on medium high 3 to 8 minutes. Test and bake longer, if needed.
