CAPSICUM-CARROT SOUP Vegetarian-Dish

This is a very simple and fast recipe for the delicious, ever popular soup. There is nothing like home made fresh soup. It can beat the canned soup anytime.It is very healthy and can be given to the babies and also to sick people.



Ingredients

Carrots
: 2
Capsicum
: 1
Chilli
: 1/2 to 1
Clove garlic
: 1/2 to 1
Salt
: To taste
Coriander leaf
: 1 stem

Capsicum-Carrot Soup

Method

  • Peel and chop carrots into pieces
  • Chop capsicum into pieces
  • Slit and deseed chilli
  • Peel and slice garlic
  • Place all ingredients in a microwave bowl, add some water and microwave till tender
  • Put this through blender and blend to coarse mixture
  • Add water depending on thickness of soup
  • Sprinkle finely chopped coriander
  • Sprinkle fresh ground pepper on top for aroma and add a dash of lemon juice
