MICROWAVE RECIPE FOR VEGETABLE CURRY
This quick 'n' easy microwave recipe for vegetable curry is full of goodness and low in carbohydrates, with a little garlic.
Ingredients
Sunflower oil
: 2 tbsp
Onion, sliced
: 225g 8oz
Garlic, crushed
: 1 clove
Curry paste (approx.)
: 1 spoon
Chopped tomatoes
: A few
Potato, cubed
: 1 large
Cauliflower florets
: A few
Lemon juice
: 2 tbsp
Method
- Put oil, onion and garlic into a microwave proof bowl
- Cover and cook for 5 minutes
- Add curry paste and chopped tomatoes
- Cook for 5 minutes
- Stir in potato, cauliflower, lemon juice and seasoning
- Cook for 15 minutes or until vegetables are tender
- Spoon into serving bowl
- Serve with yogurt, pickles and naan bread.
